The city of Irving welcomes Persona Wood Fired Pizza, which opened Dec. 8 and offers customers a new take on an old favorite.
The restaurant at Interstate 635 and Belt Line Road is within Cypress Waters, the Billingsley Co., a commercial and residential development.
Persona’s pizzas are 12-inch pies, baked rapidly at a high heat. Customers can choose from more than 30 toppings to pile on top of their pizza, or they can opt for other menu items like a stromboli or calzone.
The quality pizzeria keeps prices low considering the use of ingredients like San Marzano tomatoes and “00” flour from Naples, the same food materials. Pizzas begin at just $8.

In July, Persona opened its first location in Humble, and there’s another store scheduled to open in downtown Houston in 2017.
Glenn Cybulski and Joseph Baumel founded Persona in Santa Barbara, California, in 2013. The new location in Irving is the seventh branch opened by the chain, which extends to South Carolina and Illinois.
